Lemon curd. It’s one of those things you either love or hate. My family LOVE it. Archie has been known to sneak spoonfuls out of the fridge.
It’s also really easy to make. Especially when it only has 4 ingredients and is made in the microwave!!
1 cup sugar
finely grated zest and juice of 2 lemons (1/2 cup juice)
Melt the butter in a microwave jug or bowl. Whisk in everything else. Microwave on high for a minute. Whisk. Microwave for 30 seconds whisking in between until the curd is thick and glossy. Will take 4-6 minutes.
You need to let it cool before you use it.
You can double the recipe by simply doubling the ingredients.
Will keep for 4ish days in the fridge.
This lemon curd can be used for lemon meringue pies, macarons, cakes and on toast. The uses are endless!!
