Lemon curd. It’s one of those things you either love or hate. My family LOVE it. Archie has been known to sneak spoonfuls out of the fridge.
It’s also really easy to make. Especially when it only has 4 ingredients and is made in the microwave!!
1 cup sugar
finely grated zest and juice of 2 lemons (1/2 cup juice)
Melt the butter in a microwave jug or bowl. Whisk in everything else. Microwave on high for a minute. Whisk. Microwave for 30 seconds whisking in between until the curd is thick and glossy. Will take 4-6 minutes.
You need to let it cool before you use it.
You can double the recipe by simply doubling the ingredients.
Will keep for 4ish days in the fridge.
This lemon curd can be used for lemon meringue pies, macarons, cakes and on toast. The uses are endless!!
School holidays. Love them or hate them they happen 4 times a year.
For me if my kids are occupied and I can sit down for 15 mins with a coffee and not be interrupted then I am in heaven.
As a parent these are the small things that get you going!!
I will fully admit I suck at doing the educational play thing. I don’t make play-doh, I don’t make macaroni animals and I certainly don’t get amongst the messy play. Call me selfish, call me a bad mother but I don’t have the time or the patience for that kind of shenanigans.
One for my best friends is a Early Childhood educator and she is amazing. The simple things she does with the kids gets their brains firing and your can see them drinking in the learning experiences. I wish I could bottle her, turns her into a tablet and take my “GREAT PARENTING PILL” once a day!
I discovered Busy Bags last year at the Takapuna Baby & Kids Market. These bags take the idea of learning through play to a whole other level. For months I had been meaning to get some for Archie as he is one of those kids who loves sorting, matching and patterns.
Aimee sent me 3 bags and we loved every single one!! The Busy Bags came with instructions and a breakdown of the learning opportunities your child will get. It also (MY FAVOURITE BIT) gives the parent little tips, tricks and advice so your little one will get the most out of the bag! I actually felt like THE best parent!!
The other great thing about Busy Bags is that you can do the learning activity outlined but you can also try different things depending on your kidlet’s ability. We took the Bead Threading Kit which comes with pattern cards and then Archie decided to sort the colours and the shapes. Two in one learning = parenting win.
By far our (I say “our”, I should say Archie) favourite has been the Order and Eat bag. For us this has been kiddy crack. He can’t get enough of it. We write the order on the menu, then Chef Archie gets to work and makes our pita. The felt tomato, carrot, pineapple and lettuce gets piled into our pita and then plated up with Gordon Ramsey efficiency.
Then we eat!
Every single part of each Busy Bag is well thought out and allows the kids to have multiple learning opportunities.
We will definitely be adding to our new Busy Bags collection because they make me feel like a flipping great parent and I am down with that. The kids learning is just a bonus!!
I love a good hack.
I also love going to the hairdresser.
But I’ve found a way to add a lil bit of excitement to your hair without spending hundreds.
Now I’m pretty sure this will only work if you have blonde hair or blonde highlights.
Over the last few weeks I’ve tried the Schwartzkopf LIVE colour. This is a FREAKING bargain at $6 per box (if you have long or thick hair you will probably need 2 or 3 boxes). I picked up mine from Kmart but I’m sure supermarkets and pharmacies will stock it.
It’s so easy to use its ridiculous.
Wet your hair.
Mush the colour through from root to tip.
Leave it on for ……… well the box says 2-15 minutes.
Lasts 8 washes.
Lilac Blush –
I left ol’ Lilac on for an hour and a half to achieve this look.
Silver Toner –
I left the silver fox on for 3 hours to achieve this look.
Schwartzkopft LIVE colour is ammonia free so it won’t wreck your hair and I have found it hasn’t stained my blonde locks as some semi permanent hair colours can.
Definitely worth a go if you want to jazz up your colour. I think I’ll be a mermaid next time and go blue!!
There is a moment as a parent where you have to let go.
Where you have to release that grip on your kids that you have fought so hard to gain.
Unfortunately growing up is part of life and although we want our children to learn from our mistakes and cock ups. They can’t or won’t. They aren’t their mistakes. They aren’t their cock ups. They must learn for themselves.
We all want our children to do their best but do you remember your mother saying to you “if you just knuckled down and focus, you would do so much better!” Did you listen?
I struggle with Mr 11. Essentially he is me and we do probably rub each other up the wrong way. Unfortunately I have to have the last word and it really takes all my capacity as a parent to ignore his attitude and walk away.
I read a really great article about how children are just trying to “fill their cup”. Essentially what this parental guru was saying is that kids have an unexplained need to have a full emotional cup. This cup becomes full from both positive and negative interactions. For example asking a child to empty the dishwasher and them bitching, moaning that you are a slave driver is quite normal because they want their cup to be filled. Now my normal response would be something along the lines of “just empty the bloody dishwasher , your acting as if I asked you to chop your legs off” then this launches into a vicious cycle of bitching, arguing and the job taking 10 times longer.
Child 1 – Parent 0.
His cup is full.
I’m just pissed off.
We can all relate?
As a parent I need to learn how to stop him from “filling his cup” in a negative way. Easier said then done. Back to emptying that sodding dishwasher. His immediate response is to launch into asshole mode to fill his cup. My response SHOULD (this is still a work in progress!) be …… “OK but please realise if you don’t do the dishes you won’t be allowed on your …… (insert some beloved device, toy or activity here)”.
Stick to your guns.
Stop them before they launch into the “I hate you monologue”.
Repeat the expectations calmly and reasonably.
Don’t let them see they fact that you really want to see them do every single dish by hand and make them really cry about something.
Now like I said for me this is a work in progress and if your child is anything like mine they will know exactly how to play you.
Just remember don’t let them fill their cup but remember to fill yours with wine.
GUESS WHAT ?!?
Today is the first day of spring, which means summer is not that far away.
Here are a few of my favourite summer essentials.
Hats are my thing. There are two kinds of people in the world. People who can wear hats and people who can’t. Take my Grandfather for example, he was one of those individuals who could NOT wear a hat. Be it fedora, baker boy or cap it was just a big fat NO! Luckily I didn’t inherit that gene. Hat’s for me add a little “something something” to an outfit and summer is the best time to play around with all manner of head wear (without fear of it blowing off). Let’s also remember a good hat protects out faces from the old UV rays that can crisp up our skin. So hats are practical and stylish. It’s a win win.
If you have been following me on Instagram or Facebook you would have seen my Tilly from Saben EVERYWHERE! I love her. I eyed her up in-store and wanted to give her a home. She finally became part of our family on my birthday (thank you husband, all those hints worked!). Tilly will change your life. I actually mean it. As Shakespeare said “she may be little but she is fierce” Tilly is this. Little but will fit your WHOLE life in her pockets. As a mum of two little ones we still have to take our “baby bag” with us and to be honest I ain’t got time for a baby bag, big ass hand bag and the kitchen sink. Tilly fits inside our baby bag or whatever we have with us. Yes Tilly is an investment but it’s one I would make again as I think Tilly is getting lonely and needs a new friend.
I don’t know about you but in summer I tend to always live in my black haviana jandels. Comfortable but a little bit boring. Last year I found Lulu Avarcas on Instagram and instantly wanted them. Beautiful handcrafted leather sandals which are so bloody comfy you won’t want to take them off. The only problem I have with them is that there are so many colours to choose from and I want one in every colour! Even better they have just released a kids range. Matchy Matchy!
I am a comfort kinda gal. I love a good pair of denim shorts and a tee. Last year I lived in my Factorie rolled cuffed denim shorts – To be honest I am probably a bit old for this shop BUT I went for a bigger size so they were a bit longer so my kooch wasn’t hanging out!! My go to tees are a basic tee from Glassons or Gypsy Pirate who always do a great range of tees and singlets for summer.
Living in New Zealand regardless of skin tone we MUST look after it in the summer months. I’m a burner, like crispy bacon burnt if I don’t wear sunscreen. Frankie Apothecary does an amazing all natural sunscreen and bug repellent. Great for me, great for the kids and I love the fact it doesn’t leave that horrid greasy feeling on your skin and it moisturises it too. One less thing for me to do over summer!
I am potentially the palest person you will ever meet. I don’t go brown, I don’t tan, I just go red, then white again. If I could change one thing about myself it wouldn’t be my boobs or my jiggly mummy tummy, it would be my ability to tan. I know this probably sounds bloody ridiculous but them pale person problems! I love a tan that is instant, I don’t have the time to wait around for a tan to develop because 90% of the time I choose an outfit then think “F**K! I need to tan my legs!” Eco Tan have just launched their new Cacao Firming Mousse, this bad boy takes an hour to develop a beautiful caramel colour and if your like me I leave it on overnight without washing it of you will be one bronzed babe. In the next week or so I will post some before and after shots so you can see the results. Eco Tan is nasty stuff free, vegan friendly and cruelty free.
These are my summer essentials. All I need to do now is work on my bikini body …..
